Baked Corn Dog Recipe

06 August 2013

When you hear corn dogs are on the menu, what do you think of? I think of the carnival and food trucks. But I also think of the fat, grease and cellulite-promoting ingredients. As such, I'm thinking that there has to be another way to enjoy the corn dog without all of the guilt and remorse.

So I came across a recipe on Pinterest and with a bag of fresh corn meal from the farmer's market at St. Augustine as well as some natural chicken hot dogs, I was ready! Essentially, I took the corn meal, added two eggs and a little water until a batter formed. I then heated up the hot dogs in a skillet with a small amount of water. After warming, I dipped the dogs in the batter and then placed them gently on a Silpat and in they went to bake into a pre-heated oven at 400 degrees F for about 10-15 minutes until golden brown. Maaaaannnnnn! These came out great!!
