In the fall, I posted a delicious Crockpot Turkey Meatball recipe courtesy of one my favorite recipe blogs of all time, SkinnyTaste. Because it was such a hit with Mr. Collier, I anticipated the shopping trip where ground turkey was on sale. Fortune struck because I was able to acquire both ground turkey and lean ground pork. So I made some minor adjustments to the original recipe.
I made the sauce and prepared the crockpot as I described in September. Next, I combined the ground meat and added one egg, spices (chili powder, oregano, thyme, salt and pepper to taste), 1/2 cup of Italian bread crumbs and 1/4 cup of shredded Asiago cheese. I took off my watch and wedding band and in went my hands squishing the mix together. I formed small golf ball-sized meatballs and placed them in the crockpot to let them cook on high for the entire day. It literally took 15 minutes to prep the meal so it is ideal for a morning. In fact, my best meatballs get made at 6:30 a.m. As you can see from the image above, the meatballs were gorgeous! Mr. Collier and I had four each for dinner, two each for lunch the following day and three for dinner. For less than $15 we had three entire meals!! Meal planning rocks!
